做法
1. | 準備好紅豆內餡並放在一旁待涼。 |
2. | 準備好紅色粿皮。做好的紅色粉糰切成10等份並揉成圓球。 |
3. | 將粽葉剪成20cm長片,共需6片。粽葉和模具上抹油。 |
4. | 取1份粿皮,擀成橢圓片,大小需能覆蓋住龜型圖案。粿皮上放1/4杯的餡並抹平。將另一份粿皮也擀成同樣大小的橢圓片,然後覆蓋在原先有餡的粿皮上,四週壓緊。做好的紅龜粿放模具上壓出圖案,切除超出模具的粿皮,略為整型後放到抹油的粽葉上,有花紋那面朝上。重複此步驟將剩餘材料做完,共做10個。切下來的粿皮,揉過可再做兩個橢圓粿皮。 |
5. | 蒸籠水燒開。將紅龜粿放進蒸籠中小火蒸10分鐘再用小火蒸5分鐘。 |
PROCEDURE
1. | Prepare the Red Bean Filling . Let it completely cool down. |
2. | Prepare the Red Rice Dough. Divide the dough into 10 equal pieces and roll each into a ball. |
3. | Cut the bamboo leaves into 8" long pieces. You will need 6 pieces. Oil the bamboo leaves and the turtle mold. |
4. | Roll one dough ball into an oval disk that can cover the turtle pattern of the mold. Spread ¼ cup of the red bean filling on the dough disk. Roll another piece of dough ball into the same size of oval disk. Cover it over the first oval dough disk then press the edge to seal. Place the cake onto the mold and press to make turtle pattern. Cut off the excessive dough then transfer the cake onto one oiled bamboo leaf, pattern side up. Repeat this step for the remaining dough and filling. Re-knead the cut-off dough which can make two more oval dough disks. |
5. | Bring the water in the steamer to a boil. Stem the rice dumplings over medium-low heat for 10 minutes then steam over low heat for 5 minutes. |
